  • 2 cups grape or cherry tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon chilli flakes optional, for a touch of heat
  • Salt to taste
  • Fresh basil leaves for garnish
  • 1 baguette sliced into 1/2-inch pieces

  • Prepare the Tomatoes: Preheat your oven to 190°C (375°F). Arrange the tomatoes on a baking sheet, drizzle with olive oil and red wine vinegar, then sprinkle with dried oregano, garlic powder, chilli flakes (if desired), and a pinch of salt. Toss to ensure the tomatoes are evenly coated.
  • Roast the Tomatoes: Roast in the preheated oven for 18-22 minutes, or until the tomatoes are soft and just beginning to burst. This roasting process intensifies their natural sweetness and adds a delightful depth of flavour.
  • Toast the Baguette: While the tomatoes are roasting, arrange the baguette slices on a separate baking sheet. Lightly brush each slice with olive oil. Toast in the oven for about 10 minutes or until golden and crisp. Keep a close watch to prevent burning.
