Ingredients
  

For the Crust
  • 1 ½ cups Nabisco graham cracker crumbs Honey Maid works perfectly
  • 2 tbsp brown sugar
  • Pinch of salt
  • 6 tbsp unsalted butter melted
For the Cheesecake Filling
  • 4 8 oz packages cream cheese (Philadelphia recommended), softened
  • 1 cup granulated sugar
  • Pinch of salt
  • 1 cup sour cream
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 3 large egg yolks
  • 3 large eggs
For the Fresh Strawberry Topping:
  • 3 cups strawberries hulled and sliced
  • ¼ cup granulated sugar
  • Pinch of salt
  • 2 tbsp strawberry jam
  • 1 tsp lemon juice

Method
 

Step 1: Prepare the Crust
  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, brown sugar, and a pinch of salt.
  3. Stir in melted butter until the crumbs are evenly coated.
  4. Press the mixture firmly into the bottom of a 9-inch springform pan.
  5. Bake for 10 minutes, then set aside to cool.
Step 2: Make the Cheesecake Filling
  1. Beat cream cheese until smooth and fluffy.
  2. Add sugar and salt, mixing until combined.
  3. Blend in sour cream, lemon juice, and vanilla.
  4. Add egg yolks one at a time, then mix in the whole eggs on low speed. Avoid overmixing to keep the batter airy.
Step 3: Bake the Cheesecake
  1. Pour the filling over the cooled crust.
  2. Place the springform pan on a baking sheet and bake for about 55–60 minutes, until the center is just set.
  3. Turn off the oven, crack the door open, and let the cheesecake rest inside for 1 hour. This prevents cracks.
  4. Remove, cool completely, then refrigerate for at least 4 hours or overnight.
Step 4: Make the Strawberry Topping
  1. In a saucepan, combine strawberries, sugar, salt, jam, and lemon juice.
  2. Cook on medium heat for 5–6 minutes until the berries release juices and thicken slightly.
  3. Cool completely before spreading over the chilled cheesecake.
