Baked Buffalo Chicken Dip Recipe

Ingredients
  

  • 2 cups shredded cooked chicken I love using rotisserie chicken for convenience
  • 1/2 cup Frank’s Buffalo Sauce
  • 8 oz cream cheese softened
  • 1/2 cup ranch dressing
  • 1 cup shredded mozzarella cheese
  • 1/4 cup crumbled blue cheese
  • 1/4 cup sliced green onions optional for garnish
  • 1/2 tsp hot pepper sauce for extra kick!
  • 1 tbsp seafood seasoning optional for a unique flavour twist
  • 1/4 tsp cayenne pepper optional for added heat

Instructions
 

Preheat the Oven

  • Start by preheating your oven to 350°F (175°C).

Mix the Dip Base

  • In a large bowl, combine the shredded chicken, Frank’s Buffalo Sauce, cream cheese, ranch dressing, mozzarella cheese, and half of the crumbled blue cheese. Stir until everything is well mixed and creamy. If you like a bit more spice, add hot pepper sauce or cayenne pepper.

Transfer to a Baking Dish

  • Spread the mixture evenly into a medium-sized oven-safe dish (9x9 works perfectly). Smooth the top with a spatula to make sure it's level.

Add Cheese and Bake

  • Top the dip with the remaining blue cheese and a sprinkle of extra mozzarella. Place it in the preheated oven and bake for 20-25 minutes or until the top is bubbly and slightly golden brown.

Garnish and Serve

  • Once the dip is out of the oven, sprinkle with sliced green onions (if you’re using them). Serve with tortilla chips, celery sticks, or crackers for dipping.

Notes

  • Rotisserie Chicken: This recipe is faster and more flavorful, and rotisserie chicken adds a lovely tenderness and depth to the dip. If you prefer, you can also use canned or fresh-cooked chicken.
  • Adjusting Spice Levels: You can change the heat of the dip by adjusting the amount of Frank’s Buffalo Sauce. For a milder dip, reduce the buffalo sauce or use the mild version. For more heat, add extra hot sauce or cayenne pepper.
  • Make-Ahead: This dip can be made up to 24 hours in advance. Assemble it in the baking dish, cover it with plastic wrap, and refrigerate. When you’re ready, bake it as directed. It's perfect for parties or busy days.
  • Freezing: You can freeze the dip before baking. Assemble it, cover it tightly with plastic wrap, and freeze it. To reheat it, thaw it overnight in the fridge and bake it as usual.
  • Add-Ins: Get creative with add-ins! For extra flavor, try adding crumbled bacon, shredded cheddar cheese, or jalapeños.
  • Serving Suggestions: Serve with crunchy snacks like tortilla chips, pita chips, crackers or fresh veggies like celery and carrot sticks. You can also use it as a topping for baked potatoes or with warm, soft bread.
  • Storage and Reheating: Leftover dip can be stored in an airtight container in the fridge for up to 3 days. To reheat, bake at 350°F for 10-15 minutes or microwave for 1-2 minutes. Stir halfway through.
